A lovely 5" Cassata Cake for two (with leftovers, so you can keep the sweet celebrations going!). 5" round serves 2 - 4.
Two layers of vanilla bean pan di spagna (Italian sponge cake) soaked the sweet fruit syrup of our candied decorations, filled with ricotta, chocolate chips, and candied lemon and orange peel. Next, our cassata is layered with a house-made marzipan, white vanilla bean glaze, buttercream flourishes, and candied winter fruits (pear, quince, persimmon).
Please note this cake requires one week's advanced notice for pre-order.

Storing your cake:
Because of the ricotta filling, this cake should be kept refrigerated until ready to serve. Cake can be removed from the refrigerator 1 - 2 hours prior to service to come to room temperature.
