Sfogliatelle, also commonly called “clamshells” or “lobster tails” because of their shape, are delicate, crackling pastries created by hand-shaping almost-transparently thin discs of laminated dough outwards. Each layer is softly pushed apart just enough to create it’s signature fanned pattern, shaped into a cone, and filled with a from-scratch creamy ricotta and semolina mix with candied citrus peel. The end result is a crispy-on-the-outside, creamy-on-the-inside showstopper with notes of cinnamon and candied citrus perfect for your holiday table.
