Also known as seven-layer or tri-color cookies, these Italian classics are famously known for their bright colors to honor the Italian flag. Three layers of soft cookie made with almond paste are sandwiched between layers of apricot jam and dark chocolate. Soft and dense with hints of almond, vanilla, apricot, and chocolate.
